I Fiori Blu 2009 - IGT Toscana Cabernet Sauvignon
I Fiori Blu is produced following the criteria of guided control of parasites; selected manual gathering of the grapes; fermentation inside open barrels with very frequent pressing for about 12 days Temperature controlled at 25 C°; post -fermentative soaking with daily pressing for about 6 -8 days.
Cabernet Sauvignon. 14,5% vol. Total acidity: 6gr/ l. Ageing: part 18 months in French oak (Allier wood) 112 lt. Half barriques, part 24 months in French oak (Allier wood) 225 lt. French barriques; then in bottles.
