Description

The Traiano is a Rosso Conero DOC awarded 3 Glasses by Gambero Rosso and Wine of Excellence by Espresso.
The vineyard sits at 230 m above sea level. Southern exposure.
Cordon spur and guyot training. Yield per hectare: 60 quintals.
Grapes are picked and placed in small boxes. Selection of overripe, healthy grapes. Three-step harvest in mid-October.
Controlled temperature fermentation (22-28°C for 25-30 days) in French oak vats, malolactic fermentation and élevage in French oak barrels (70% of which are new and 30% two-years-old) for 18-24 months. Six months bottle ageing.
Serve at 18° C
Production: around 10,000 0.75l bottles and 200 1.50l bottles.

The Traiano is a Rosso Conero DOC awarded 3 Glasses by Gambero Rosso and
Wine of Excellence by Espresso.
It is produced with selected grapes harvested at the end of October and coming
from 50-year-old vines.
The yield per hectare is 0.6 t/ha.
The first fermentation takes place at a controlled temperature in French oak vats,
with daily manual breaking of the cap for 20/25 days.
The malolactic fermentation and elevation is done in new and used (second cycle) French oak barrels for 18/24 months.
The refinement is in bottle for 6 months.

Color: intense dark red.
Aromas: at the beginning hints of undergrowth, mushrooms and leather. Continuing
aromas of spices, roasted coffee, licorice, smoke and tobacco.
In the mouth: good volume with evolved and soft tannins; slightly bitter and astringent but not dry in the finish; persistent in the mouth.
Pairing: excellent with spicy fish soups such as stockfish and anchovy, elaborate meat dishes, stews, pecorino cheese.

Traiano: why is it called so? Both wines also take inspiration from character and name from two Roman emperors. In the name of the second Rosso Coner Doc of the company there is a strong reference to the territory, in fact Traiano left from Ancona for the mission of conquering Dacia.
