Straw and hay Garganelli typical of Romagna, have a tubular shape and a characteristic perpendicular groove. They are obtained by rolling the dough around a stick and then striped with a tool called comb until a unique consistency is obtained. The name “Straw and Hay” recalls the simplicity and genuineness of the origins of Italian cuisine, a classic one based on flour and eggs and a green one in which a puree of spinach is added to the dough; yellow alludes to the brilliance of straw, green to the freshness of hay.
